The gluten-free pizza is so good I always get one to take home. Last night my main meal was seared scallops on risotto. I love seared scallops! They have gluten-free table bread for 3.50, and it’s good, but for some reason the butter was funny tasting, like freezer-burned-flavor…ick. To get that taste out of my mouth I finished dinner with one of their fantastic gluten-free crepes
The Royale has banana, strawberry, toasted almond slices, chocolate sauce, and whipped cream. So delicious. Dinner was a hundred bucks (for mine and the husbands, and that’s a pizza that I didn’t touch yet), but it’s a really nice gluten-free treat.
I have a terrible cold, which means I’m acting like a baby. I asked (begged) my husband to make me some Annie’s gluten-free mac and cheese, but with sour cream instead of milk (a family recipe). He did, and it was soooo good. He used 1/4 cup sour cream, 1 tbs butter, and a splash of milk. It was perfect. Happy belly. Now for nyquil and sleep.
We were looking for a new truck (to replace the one totaled in the 12/23 snow storm accident) and drove to Loveland to check out a couple. I always find an excuse to eat at a new restaurant
This time it was Biagi’s. The spinach pasta was delicious! The pizza was not so great. I will post a full write-up on Celiac-Disease.com tonight!

So I have finished nursing school, mailed in my transcript to the state, paid for my NCLEX, and now I am just waiting for the test date! Woohoo!!! I am so excited…and also a little freaked out. This means a new job, and more changes. I love change, but it is usually nuts, because I am one of those people that needs a plan and needs to stick to that plan
I am catching up on some GF posting and have put a couple of articles up on Celiac-Disease.com about Traveling Gluten-Free (by road or by air, like airports), Simple Money Saving Tips for the GF Shopper, GF Green Bean Casserole (not published yet, will publish on 12/19/2009), and I posted an article on Examiner.com about where to find the fried onions that I use for my gluten-free green bean casserole (locally, in Boulder). Progresso Creamy Mushroom soup is gluten-free, and labeled as such directly on the can! I was shocked to see a large end-cap at Walmart Supercenter in Longmont, CO, because I have previously had a very hard time finding this soup. I use it for my gluten-free greenbean casserole. My recipe is so easy: one huge can of French cut greenbeans, one can progresso creamy mushroom soup, salt and pepper to taste, and fried onions from an Asian market in Boulder that has no flour coating (just deep fried onions). So easy and good!
I’m going to start weeding some things (jobs, etc) out of my life. I would rather be better at a few things than be ok at many. I will keep my blog, I think, but not write anywhere else. I don’t know. I just need a break from stuff. I realized that even though I am about to graduate, that just means a whole new set of things going on, like looking for a new job. I have about 10 articles waiting to be written, so I will probably write those before I sign off of Examiner.com as the Gluten-Free Food Examiner. I might write for Celiac-Disease.com here and there if they will let me do that instead of a regular schedule. We’ll see what happens.
